Get your fill of tasty, beneficial greens in this blend of vegetables and microgreens. Pair with your favorite dressing or a blend of olive oil and lemon juice. (Makes 6 servings, Prep Time 20 minutes)
The Ultimate Garden Salad
Ingredients
2 heads Romaine lettuce, cleaned and chopped
1 Cup fresh baby spinach washed and dried
15-20 cherry tomatoes, halved
1 large carrot, julienned
½ cup sunflower microgreens
½ cup radish microgreens
½ cup pea microgreens
1 cucumber washed, sliced or diced
½ purple onion, sliced thin
½ c sliced black olives
Directions
After cleaning and preparing vegetables, place all ingredients except onions and olives in a large bowl. Lightly toss to mix. Once mixed, put salad in a serving bowl, and layer onions to add more color. Sprinkle with black olives. Serve with croutons, nuts and dressing of your choice. A raspberry vinaigrette is perfect with this salad.
